At Culture Day during my final term at business school, the Mediterranean stall drew the longest queue—its bounty of olives, roasted peppers, flatbreads, and fresh herbs seemed to captivate everyone. After the event, I found myself lingering in the kitchen alongside classmates from across the Mediterranean basin, eager to learn how they balanced acidity, earthiness, and brine.

Evenings were spent tasting olive oils by lamplight, experimenting with za’atar blends, and mastering the art of seasoning simple dishes until they sang. Those moments of shared learning and hospitality taught me that the true power of Mediterranean cuisine lies in its convivial spirit—and inspired our egg creations, which capture that same generosity of flavour, friendship, and global connection.
